2 ounces bourbon

1 ounce lemon juice

1 ounce watermelon simple syrup (recipe follows)

½ ounce egg whites or aquafaba (optional)

6 drops Crude Rizzo bitters (rosemary, grapefruit, peppercorn)

1 bar spoon peppercorn tincture (optional)

5 spanked mint leaves

Garnish: fresh watermelon and spanked mint leaves (optional)

Combine ingredients in a cocktail shaker and add ice. Shake for 10–12 seconds, until very cold. Strain into another shaker and use a handheld latte whisk for 20 seconds if using egg whites or aquafaba. Pour into a chilled coupe glass and garnish.
